Yes, like most other vegetables, zucchini will brown if you leave them open on the counter after cutting.

Let me tell you many fruits and vegetables, zucchini contains enzymes that react with oxygen, leading to a process called enzymatic browning.

But when the flesh of a cut zucchini is exposed to air, it may undergo oxidation, resulting in a brown discoloration.

If you want to minimize browning for your zucchini then you can take a few steps which i am going to tell you:-

A sharp knife will cause less damage to the cell walls of the zucchini, reducing the amount of enzyme exposure and browning.

If you cut the zucchini right before you plan to use it, there will be less time for enzymatic browning to occur.

If you need to store cut zucchini for a short period, keep it in an airtight container or wrap it tightly in plastic wrap to limit its exposure to air.

While some browning is natural, excessive browning or a foul smell could indicate spoilage, and the zucchini should be discarded.
